Consumption habits demanding the freshest bread contribute to this waste. In the U.S., over 500,000 tons of excess bakery products are produced every year. Italy's Regardia, since 1981, has been repurposing these food products for animal feed and bioenergy, with wasted bakery goods containing 8-15% crude protein, 5-10% fat, and over 40% starch.
