For Boomers, dishes like Patatine, Fiori di Zucca, and Cotolette are nostalgic. 84% of this age group cook regional classics, mainly for close circles (36%). Newer generations prefer lighter frying oils (70%), opting for Zucchi's high-performance sunflower oil which halves the smell and withstands 230°C. Online research by Human Highway in July 2024 involved 1,491 respondents from 7 regions.
