🍰 Christmas period 2024 saw significant sales increases in many bakeries, some exceeding 40% compared to the previous year. Expert Nicola Candian, at Sigep World in Rimini (January 18-22, 2025), highlighted the confusion among operators between cash flow and true margin. A study of 100 Italian bakeries showed 78% of owners inaccurately calculated production costs. For instance, a handmade panettone sold at €38 had an estimated margin of 70%, while the actual margin was around 55-60%. The average real margin during the rest of the year is about 25%. Costs analysis revealed: raw materials 25-30%, energy 15-20%, personnel up to 35-40%, equipment amortization 10-15%, packaging and marketing 8-10%. The Christmas season, accounting for 20% of annual turnover, often masks structural inefficiencies, with 65% of bakeries using December revenues to cover subsequent months' expenses. Star Clippers in rotta dal Mediterraneo ai Caraibi

🏖️ Star Clippers is set for summer in the Mediterranean and offers early booking for the Caribbean and Costa Rica for winter 2025-2026. The four-masted Star Clipper will depart from the new home port of Grenada in January 2026, with new 10 and 11-night itineraries including destinations like Charlottesville (Tobago), Castara Bay (Tobago), and others. The summer 2026 catalog features new Mediterranean stops in Italy's Marche, Puglia, and Calabria, plus new ports like Sebenico (Croatia) and in Greece. Long-haul bookings are growing, especially with early booking discounts of up to 20% for reservations made by April 30, 2025. Barbados will see 16 departures between December 2025 and March 2026.

Ready to Drink in crescita nel fuoricasa. L'indagine CGA by NIQ

🍺 November 2024 CGA by NIQ Consumer Pulse Report highlights growth in Ready To Drink (RTD) beverages among Italians. 26% have purchased RTDs in the last three months, and 49% are open to trying them. Dining out remained steady with 84% of consumers, and 55% went out for drinks. Price influences 31% to buy RTDs, while 32% find them too costly. Incentives like unique drinks (27%), variety of flavors (27%), and convenience (17%) drive purchases, but 36% desire more variety; 27% are deterred by high sugar content.

🍪 Epta presented its complete technology proposal for Sweet Foodservice at the 46th SIGEP, the International Artisan Gelato, Pastry, Bakery, and Coffee Trade Show, from January 18-22, 2025, in Rimini. Showcasing Iarp and Eurocryor brands at Stand 094 – Pavilion A3, Epta featured a Delight 16 plug-in freezer in climate class 5, Globo 700 Csv Ng and Globo Retrò 220 freezers in energy classes C and A respectively, and the Manhattan vending machine. The Fruit Bar format by EptaConcept highlighted the fresh fruit sector with the Gemini Integral showcase, while Glee variants (42, 45, and X Slim) offered efficiency and digitalization in energy class C. Alice Ferrari, Head of Product Marketing at Epta, emphasized the brands' synergy, innovation, energy efficiency, and customizable design.
