🍸 Distilleria Alma in Modica, Sicily, founded in 2021 by Annalisa Spadaro, Hugo Gallardo, and Alejandro Lopez, is Italy's first dedicated rum producer, crafting Rum Mater. Two sugar cane types are cultivated: sweet, fruity viola and earlier-maturing yellow from Spain. Sugarcane is harvested manually from March to June, with juice fermented for 72 or 96 hours before distillation. The Mater line includes various rum profiles and Mater Gin from Panela raw sugar. The distillery began with an acre in 2022, expanding to three acres in 2023. Mater Rum is distributed by Rinaldi 1957 since February, a company with a €22.3 million turnover and a portfolio of over 130 brands.

Export formaggi: nel 2024 cresce il mercato in Giappone

🍪 Italian cheese exports to Japan grew by 14% in volume and 11% in value in 2024, with 12,700 tonnes worth €106.9 million exported, 40% of which were PDO products. Grana Padano PDO and Parmigiano Reggiano PDO led with a 12% increase, nearly 2,000 tonnes valued over €22 million. Grated cheeses soared by 87% (1,400 tonnes), followed by Mozzarella di Bufala Campana PDO (800 tonnes) and Gorgonzola PDO (510 tonnes). AFIDOP revealed these figures at Foodex Japan 2025 in Tokyo, held from March 11 to 14, 2025. President Antonio Auricchio highlighted that despite the Yen's depreciation in 2023, demand for PDO Italian cheeses continues, supported by the 5,000 Italian restaurants in Tokyo and the popularity of Western dishes like cacio e pepe. Cheese consumption in Japan has more than doubled since 1990, exceeding 300,000 tonnes, with fresh cheeses trending upwards.
