Valfrutta al Vapore: arriva una nuova gamma in brick più sostenibile

🍅 Valfrutta is enhancing its eco-friendly packaging commitment for its 100% Italian tomato preserves by introducing a new 500g steam-cooked Velvety Tomato Puree in brik format and restyling the 1000g brik and 390g Tetra Recart Fine Pulp. The new brik has 64% plant-based materials, the Tetra Recart over 70%, both recyclable in most Italian municipalities. The Tetra Recart reduces CO2 emissions by 83% compared to jar and can packaging and is FSC® certified. The 1000g brik is priced at €1.29, and the 390g Tetra Recart at €0.79, while the new 500g brik, with a convenient twist-off cap, impacts 25% less on CO2 emissions and is priced at €0.79.

La Residenza Khaddiuggia entra nella Top 100 di Green Destinations

🌲 Residenza Khaddiuggia, managed by nearly octogenarian Manila Foresti Sancinelli, is the first Italian enterprise to join the Top 100 Stories list from Green Destinations. The competition showcases 100 exemplary destinations and businesses addressing environmental, social, and economic challenges to promote responsible travel experiences. Residenza Khaddiuggia, located on the island of Pantelleria, achieved second-level (Silver) certification and has been recognized for its innovative, original, and replicable model of eco-friendly hospitality. The business stood out for involving local producers and guests in a network that fosters both a circular economy and more humane, empathetic tourism, as well as intergenerational collaboration with IATH Academy Lake Como students. Concetta D’Emma, Italy's Green Destinations representative, played a key role in this achievement, promoting Italian tourism stories of passion, sacrifice, and resilience.

Crescita del mercato dei vini kasher: fino a +7% nei prossimi cinque anni

🍾 Global kosher wine market is expected to grow at a 5-7% CAGR over the next five years, with a +5% demand increase in Europe and up to +7% in the US compared to last year. The "Kosher Certification Synonymous with Italian and Lombard Excellence" conference was held on October 30 in Mantova. Edoardo Freddi International, Italy's first wine export management company, collaborates with several Italian wineries exporting kosher wines. In Italy, the top 5 regions for kosher product demand are Lazio, Lombardy, Emilia-Romagna, Veneto, and Friuli Venezia Giulia, with Tuscany and Piedmont following. The USA is the primary market for kosher wine, consuming 60% of global production, especially in New York and Los Angeles. Edoardo Freddi International's 2023 revenue exceeded €86 million, a +6% increase from 2022, with 35 million bottles sold mainly in the USA, Germany, UK, Denmark, Singapore, Belgium, Sweden, Poland, and Greater China.

Partesa Wine Lab: ultima tappa in Umbria

🍷 Partesa, an Italian Horeca sector leader, concludes its wine tour in Umbria. The “Wine Lab di Perugia” event is set for Monday, November 4, from 11 a.m. to 6 p.m., at Hotel Ristorante e Spa “Posta Donini 1579” in San Martino in Campo (PG). Over 130 wineries from Italy, Europe, and the USA, with 70 producers from Italy, France, Austria, Germany, Spain, and the USA, will showcase their wines to Umbrian venue managers. Partesa also offers personalized consultancy and continuous training through Università della Birra and Cantera del Vino. Registration for industry operators is free online.

Baladin presenta la nuova edizione della Birra Metodo Classico

🍺 Birrificio Baladin launched the limited-edition Metodo Classico Riserva 2019, with only 4,900 units produced, featuring a 50-month yeast aging process in the bottle. Disgorgement occurred between January 29 and February 2, 2024. The beer has an amber color, opalescent look, and a frothy, persistent foam. It comes in a 75 cl bottle, with a recommended price of €23, and is best served at 10/12°C. It has an alcohol volume of 9%, Plato of 19.5, IBU between 10-12, and EBC between 12-14. Ideal pairings include flavorful shellfish like oysters and fatty cheeses.

Founded by Alessio Matrone and Danilo Caruso, IT's brand restaurants exist in Ibiza, London, Milan, Porto Cervo, and Tulum. Executive Chef Romualdo Palladino and Head Chef Alex Pochynok lead the culinary experience, supported by Bar Manager Edoardo Raimondi for signature cocktails. Lo chef Francesco Sodano firma il nuovo menù autunnale del Ristorante Famiglia Rana

🍴 Chef Francesco Sodano created three tasting menus for Ristorante Famiglia Rana. The signature dishes include "Porro tra fumo e cenere" and "Pane e Nutella". Sodano's meat maturation techniques use beeswax from Valle del Feniletto's 16 beehives and meats from local farms since the restaurant's opening in February. Dry-aged meat is wax-wrapped for up to 7-8 months for pigeon and duck, and 3 months for lamb. Located in Vallese di Oppeano near Verona, the restaurant emphasizes sustainability and sources from a network of local producers.
