🍪 Ar.pa Lieviti, active for over 50 years, offers Giallocrema, a powdered mix for custard cream aimed at the professional food sector. The mix, made from cornstarch, potato starch, and vanillin, enables easy creation of various creams with customizable consistency and taste. Using 15-20g per liter of milk produces a dense cream, ideal for pastries and desserts. Giallocrema is gluten-free, complying with EU Regulation 828/2014, and has a 4-year shelf life. It's available in a 2kg resealable, recyclable bucket designed for bakeries, patisseries, and restaurants.

Acqua sostenibile: BRITA rinnova il suo impegno

💧 On World Water Day, BRITA, a German company specializing in water optimization, launched the "Be a Gamechanger" campaign, encouraging sustainable water use and plastic pollution reduction. BRITA offers quality filtered water solutions for consumers and professionals and has been a reference in the domestic and professional sector for 20 years in Italy. The company has adopted two marine waste collectors at Marina Blue Dolphin in Rome Fiumicino and Venice Certosa Marina, projected to collect about 2 tons of waste annually, including plastics and microplastics. BRITA's carbon footprint is up to 25 times lower with filtered water, aiming to avoid over 6.5 billion single-use water bottles by 2025, reducing its carbon footprint by 1 million tons of CO2. BRITA also supports Whale and Dolphin Conservation since 2016 and promotes an initiative cashback until April 30, 2025, offering a €10 refund on combined purchases of a BRITA filter jug and a 2 or 3 pack of MAXTRA PRO ALL-IN-1 filters. The company reported a total turnover of €691 million in fiscal year 2023 and had 2,314 employees worldwide by the end of 2023, with 1,216 in Germany.

Levante PROF 2025: successo e crescita per la fiera Horeca del Sud

📆 Levante PROF's ninth edition concluded successfully, surpassing 20,000 specialized visitors and increasing attendance by over 20% from central and southern Italy. Foreign visitors accounted for 10%, mainly from the Balkans. The event, held at Fiera del Levante in Bari, exceeded 2023's visitor numbers with 7,000 entries on the first day. The fair covered over 18,000 square meters, featuring more than 250 stands and 500 companies. Social media support included roughly 370,000 views. Enoturismo in crescita: i dati della prima indagine CESEO

🍷 In Rome, at Palazzo Giustiniani, the first survey by Movimento Turismo del Vino and CESEO of Università LUMSA was presented, indicating a 13% annual growth in the enotourism sector. The survey analyzed 237 member wineries, revealing 53% reported revenue growth, with 24% experiencing double-digit increases. Despite this, 81% noted rising costs, significantly impacting 64% micro-enterprises and 31% small enterprises. Only 38% have specialized wine hospitality personnel, and 63% of visits are received by owners. Enotourism attracts families and nature lovers, with 26% offering electric car charging stations. Most wineries (68%) accept visitors without appointments, and 53% are open on Sundays. Digitalization remains a challenge, with only 20% using AI, mainly for digital communication (70%) and marketing (63%).

Dazi USA: a rischio il 98% dei vini italiani

Unione italiana vini (Uiv) reveals at least 80% of Italian wine exports to the U.S., nearly 350 million bottles, are at risk. The U.S. market, worth about 2 billion euros, constitutes 24% of Italy's total exports. The average export price to the U.S. is 5.35 euros per liter, with "popular" wines below the 5.26 euro alignment. Additional tariffs could shift these wines into the "premium" category, which currently represents 17% volume of total exports with an average price of 8.80 euros per liter. Uiv's President Lamberto Frescobaldi emphasizes the need for a contingency plan with three levels: negotiation, community measures, and national production containment.

Cashless payments in bars grew by 35.1%, restaurants by 27.8%, with the lunch hour seeing 15% of bar and 18% of restaurant transactions. Starting January 1, 2026, POS systems must connect to telematic cash registers by law, a standard already met by SumUp's solutions.

Lindt rilancia la Dubai Style Chocolate in Italia
